About the Gas Baking Oven 3 Deck 9 Tray
Three wide gas-fired chambers, each 1300×670×220 mm and each taking three standard 400×600 mm trays across, for nine trays in the oven at once. Three independently controlled decks, 300 W electrical for the controls.
This is the largest deck oven in the range. It suits a bakery whose output is built on a few items made in quantity, where the width of each deck is used properly rather than half filled.
Each deck still bakes by conduction from below, so the crust and base a deck oven gives are not traded away for the size - which is the reason to choose this over a rack oven if hand-shaped and crusty breads are the work.
It is 1770 mm wide and 1705 mm tall, so the wall, the gas line and the extraction all have to be planned. Past this point the honest question is whether a rotary rack oven suits the work better, since rack ovens are built for even volume rather than for crust.
