About the Gas Baking Oven 1 Deck 1 Tray
One 650×420×220 mm chamber on a single gas-fired deck, taking a standard 400×600 mm tray, with a 100 W electrical load for the controls. The oven runs on gas; the electricity is only there to work it.
Where a gas connection already exists, running cost is usually the reason to choose gas over electric - the difference over a year of daily baking is the argument, not the purchase price.
A deck oven bakes by conduction from the deck into the base of the product, which is what gives bread its crust and its base. That is true whether the heat comes from a burner or an element.
This is the smallest gas deck in the range, at 960×600 mm. It is a starting point for a kitchen adding baking, rather than an oven for a bakery already running one. Check the gas line and the extraction before ordering, since both are part of the installation.
