How to Choose a Chocolate Warmer or Fountain
Warmers to hold couverture at working temperature, fountains to serve it - two and three pot, three and five tier.
Chocolate equipment splits into two jobs that are often confused. A warmer melts and holds chocolate so it is ready to pour, dip or drizzle. A fountain circulates already melted chocolate over tiers for display and self-service. Most dessert counters need the warmer; events and buffets need the fountain.
Chocolate warmers
The warmers here take standard GN pans, two pans on 1 KW in 205 x 400 mm, or three pans on 1.5 KW in 205 x 560 mm. Separate pans matter more than total capacity: dark, milk and white behave differently and should not share a pan, and a counter offering a choice needs one pan per variety. The bodies are stainless steel with GI and both are narrow enough at 205 mm to sit along the back of a service counter.
Melting is where chocolate is most often ruined. Take it up gently and hold it there. Chocolate taken too hot separates and turns grainy, and once it has seized it will not come back for coating work.
Chocolate fountains
Three tier on 170 W at 240 x 240 x 560 mm, or five tier on 230 W at 330 x 330 x 600 mm. The tier count is about presentation and queue length rather than capacity: five tiers give a taller display and more places for guests to dip at once, which matters at a wedding or a banquet where a hundred people arrive at the dessert table together.
Two practical points. A fountain needs chocolate thinned to flow, so plan for couverture or added cocoa butter rather than plain compound straight from the block. And it must sit dead level, or the curtain runs down one side and breaks on the other. Check the table with a level before the guests arrive, not after.
Choosing
- Dipping, coating, drizzling to order: a warmer, sized by how many varieties you offer.
- Display and self-service: a fountain, sized by how many people reach it at once.
- Both: common in banqueting, and the warmer doubles as the place you prepare what the fountain runs.
