A commercial blender is not a domestic one with a bigger badge. The difference is the motor and the duty cycle: a juice bar blends back to back through a rush, and a domestic motor overheats and cuts out exactly when the queue is longest.

Power is the specification that matters

The blenders here run at 1200 W and 2200 W, against roughly 400 to 600 W on a household machine. That power is what gets through ice, frozen fruit and fibrous vegetables without stalling, and what lets the machine run all afternoon without heat protection tripping. One of the two runs 5000 to 10000 rpm with stainless steel blades.

The sound enclosure

A 1200 W blender at full speed is loud enough to stop conversation at the counter. The sound enclosure model puts an acoustic hood over the jar, which changes what the customer experiences in a cafe, a hotel lobby bar or any room where people are meant to sit and talk. At 555 x 300 x 485 mm and 4 to 5 kg it takes more counter than a bare blender, and in a front-of-house position it is worth every millimetre.

Jars and capacity

Both machines take 1.5 litres, which is the practical working size for a juice bar: large enough for two or three servings at once, small enough that the blade still engages a single portion properly. One uses a Tritan jar, which is BPA free and takes knocks that glass does not survive. In a busy bar the jar is the part that gets dropped, and that matters.

Getting a long life out of one

• Liquid first, then soft, then hard, then ice. Loading in that order lets the blade catch instead of jamming.
• Do not run it dry. An empty jar at speed is what kills a seal.
• Rinse between drinks. Half a jar of water at full speed for a few seconds cleans it and keeps flavours apart.
