How to Choose a Commercial Pizza Oven
Stone-base pizza ovens by the number of decks and the pizzas you turn out an hour.
A commercial pizza oven is chosen on pizzas per batch and on the pizza size you sell. Every model listed here is built around an 8 inch pizza and runs on a 220 V single phase supply, so the decision comes down to how many go in at once and how much counter or floor space you can give it.
Matching the oven to your covers
The range runs from four pizzas a batch on 2 KW, through seven and eight, to fourteen pizzas a batch on 6.4 KW across a double deck. Count your peak hour rather than your daily average: a counter selling forty pizzas across an evening but thirty of them between eight and nine needs the oven sized for that hour. A batch that comes up short at peak means a queue, and a queue at a pizza counter is lost covers, not delayed ones.
Single deck, double deck and countertop
Countertop models at 650 x 570 mm suit a kiosk, a cafe adding pizza to an existing menu, or a cloud kitchen station where floor space is the constraint. The single deck at 945 x 605 x 485 mm takes a larger 638 x 430 mm stone and seven pizzas a batch. The double deck stacks two chambers into 945 x 605 x 810 mm and doubles output without taking any more floor, which is usually a better answer than two countertop ovens side by side.
The stone matters
These ovens bake on a stone base rather than a plain tray. Stone holds heat and returns it to the base of the pizza, which is what gives a crisp bottom instead of a pale, bendy one. Stone sizes here run from 400 x 400 mm on the compact models to 483 x 635 mm on the double deck. A stone needs a few minutes to recover between batches, so a busy counter benefits from the larger stone even at the same stated batch count.
Power and installation
Every model runs on 220 V single phase, from 2 KW to 6.4 KW. No three phase connection is needed, which is why these ovens work in rented shop units and food courts. Bodies are stainless steel with GI, and the countertop models need clearance behind them for heat. Confirm the socket rating for the 6.4 KW double deck before it arrives.
