How to Choose a Food Warmer Display
Glass display units that hold cooked food at serving temperature where the customer can see it, so the counter sells for you.
A food warmer holds cooked food at service temperature without cooking it further. It is a holding machine, not a heating one, and the distinction matters: food loaded cold will not come up to a safe temperature quickly, and food loaded hot will hold well for hours.
The two models
Both units here are stainless steel with glass, roughly 600 to 660 mm wide, 480 mm deep and 610 to 630 mm tall, and both weigh around 15 to 20 kg, so two people can lift one onto a counter. The difference is power: 800 W on the deluxe display and 1.5 KW on the premium. The higher rating holds temperature more confidently in an open, air conditioned or draughty front of house, and recovers faster each time the door opens.
Where they earn their place
Sweet shops and snack counters use them to keep samosas, kachoris and pakoras hot and visible, which is most of the sale. Canteens and buffets use them to hold portions between batches. Cloud kitchens use them to stage finished orders while the rest of a ticket completes. In every case the glass is doing as much work as the heat, because food that can be seen sells.
Getting the best from one
- Load hot. Bring food to temperature in the fryer or oven, then move it in. A warmer is not designed to reheat.
- Do not overfill. Air has to move around the trays. Packed solid, the back of the cabinet runs cooler than the front.
- Watch dry heat. Fried items hold well; anything with gravy will crust at the surface over a long hold. Rotate stock rather than holding one tray all day.
- Clean the glass daily. It is the part the customer looks at.
