A spiral turns the bowl and the hook together, drawing the dough through rather than pushing it around. It develops gluten while keeping the dough cool, and dough temperature is what controls fermentation - the reason bread bakers use spirals rather than planetaries.

Keeping the dough cool matters more as batches get bigger, simply because a bigger batch takes longer to mix and has longer to warm up.
